Food Quality Links

Poultry
Most chicken in the UK is produced under the assured chicken scheme. Further information on the scheme is available at the assured chicken web site. More general poultry quality issues are addressed by the British Poultry Council. You can also download the US quality standards for poultry from the USDA.

Red Meat
The British Meat Quality Standards are set by the Meat and Livestock Commission. The scheme covers all aspects of production including animal welfare and traceability and the production chain is independently audited.

Frozen Foods
Under EU funding we prepared, with our European colleagues, guidelines on the production and distribution of frozen foods.

The guide contains chapters on

  • Fruit and vegetables
  • Meat
  • Fish
  • Pre-treatments
  • and packaging.

Here's some excellent advice on food refrigeration from Food Science Australia and from the United States Department of Agriculture.

What are the key issues for caterers?
There's a very useful document called "Operating a Food Business", which you can download from The East Riding Council Environmental Health site. This covers issues from legislation through designing your premises, as well as equipment and good hygiene practice.

What are the key issues for retailers?
The British Retail Consortium Issued The The BRC Global Standard - Food in October 1998. The standard covers HACCP, Quality Managements Systems, Factory Environment Standards, Product Control, Pest Control and Personnel.
